July RotM: Avocado Cilantro Pasta Salad
As per usual, June completely got away from me. As we enter peak BBQ season, what's better than having a perfect, easy pasta salad recipe on hand to dazzle your friends. Oil free and filled with healthy fats from avocado, this one is sure to be a staple at every gathering from here on out.
Avocado Cilantro Pasta Salad
Makes 1 BIG bowl o' pasta salad
Prep: 10 minutes
Total: 20 minutes
Ingredients:
2 ripe avocados
1 cup spinach
1/2 cup cilantro
4 cloves garlic, minced
4 tbsp lemon juice
1/4 tsp each salt & pepper
2 ears of corn, removed from cob
1/2 cup green pepper
1 cup cherry tomatoes, halved
10 green onions, thinly sliced
16 oz pasta of your choice
Cook pasta according to directions on the box. Drain and set aside.
While pasta is cooking, blend avocado, spinach, cilantro, garlic, lemon juice, and salt and pepper in a food processor until smooth.
In a large bowl, mix pasta, sauce, and remaining ingredients. Cover and refrigerate until ready to eat; it will keep for a few days.
