Cauliflower Tacos with Broccoli Slaw
Tell you what, team: sinus surgery is no fun.
I've been having sinus issues for as long as I can remember, so I finally buckled down and got the Balloon Sinuplasty procedure. Essentially they use a tiny balloon to expand your sinus passages. They told me to eat a good meal before my appointment, and to take a Valium an hour before going in (because as it turns out, having your breathing mechanisms numbed is pretty stress-inducing!). I had some cauliflower needing to be eaten in the fridge, so I decided to make some cauliflower tacos (one of my favorite uses for cauliflower) while I waited for the medicine to kick in. Protip: Don't take strong meds and cook. Just go ahead and trust me on this one. Cooking when you feel like you're underwater is less than enjoyable. Anyway, I digress.
This is one of my favorite taco recipes because it's so simple and so delicious. The cauliflower absorbs the taco flavoring so wonderfully and the broccoli slaw adds a crisp, crunchy freshness to the party.

Cauliflower Tacos with Broccoli Slaw
Prep time: 10 min
Cook time: 15-20 min
Ingredients:
For the cauliflower-
1 head cauliflower, cut into ~1in florets
1 jalapeno, diced
1/2 tsp chili powder
1/2 tsp cumin
1/4 tsp cayenne pepper
salt and pepper to taste
<1 tbsp olive oil
For the slaw-
1 bag of broccoli slaw
1/2 C red pepper, thinly sliced
1 jalapeno, thinly sliced lengthwise
Juice of 1-2 limes
Handful of cilantro
For assembly-
Corn tortillas
Avocado/Guacamole
Salsa
Cilantro
1. Preheat oven to 400F.
2. In a medium bowl, toss the cauliflower and jalapeno in the spices and olive oil and mix until all pieces are covered.
3. Spread the cauliflower and jalapenos on a baking sheet.
4. Bake for 15-20 minutes until cauliflower is tender.
5. While the cauliflower bakes, pour the broccoli slaw, cilantro, red pepper, and other jalapeno into the same bowl used for the cauliflower. Add lime juice and stir.
6. Assemble your tacos with whatever garnish you'd like. I like mine with avocado, salsa, and a little extra cilantro.
