Sweet Potato Black Bean Burritos
My favorite thing about becoming vegetarian is how much it's improved my cooking. When you take meat out of the equation, you learn to get creative with the ingredients that you have. Spices are EVERYTHING. You could have the same 3 base ingredients for every meal, switch up the flavors, and end up with a totally different result for each. It's the best. My latest shtick has been trying to throw together meals with whatever I have lying around. Sometimes it works out well! This was one of those times.

These burritos were simple, quick, and ungodly delicious. In fact, in writing this blog, I've decided I'm going to make these bad-boys for dinner again tonight. Not even mad.
Sweet Potato Black Bean Burritos
Makes: about 3 burritos (depending on size)
Prep: 15 minutes
Cook: 20 minutes
Ingredients:
- 1 large sweet potato, cut into 1in cubes
- 1 jalapeño, chopped (seeds optional)
- ~ 3 cloves of garlic (no such thing as too much; I'm not here to tell you how to live your life)
- 2 bell peppers of any color, sliced
- 1/2 large yellow onion, sliced
- 1 can black beans, drained and rinsed
Burrito tortillas (flour or corn)
Optional Fixins:
- salsa
- guacamole/avocado (or both? You do you!)
- cilantro
- sour cream (omit for vegan)
1. Preheat oven to 400F
2. Toss your potato, jalapeño, and garlic in a little olive oil (<1tbsp, or JUST enough to coat) with cumin, cayenne, and chili powder to taste (I'm not great at measuring; I just sprinkle until it tastes awesome. I'll make it a goal to measure more for future recipes).
3. Spead evenly on a baking sheet and roast for 20 minutes, or until potatoes are fork-tender
4. Meanwhile, sauté peppers and onions to your crispiness liking and heat up beans
*Protip! Try sauteing your veggies in 1tbsp of vegetable broth instead of oil. Just as tasty!
5. When the potatoes are tender, assemble your burrito with whatever tickles your fancy; I had homemade salsa, guac, cilantro and sour cream.
I made these with my lovable, carnivorous boyfriend and they were TO DIE FOR. He was super skeptical about the idea of sweet potato replacing the meat as the centerpiece of these burritos, but every time I turned around, I found him stealing pieces of it straight from the baking sheet. Consider them Josh approved ✓
